APETITO HOUSE, A MODERN DELI WITH SANDWICHES WITH STYLE. BEHIND THE PROJECT ARE NURIA ROBLEÑO AND LUCÍA AVENDAÑO, WHO HAVE CREATED A SPACE THAT IS HALF DELI, HALF SANDWICH BAR, A TRUE TRIBUTE TO NATIONAL CURED MEATS. THE GOAL? TO GIVE THE SANDWICH A NEW IDENTITY AND TURN IT INTO A FULL-BLOWN PLAN.
How did Apetito come about?
Apetito was born from the idea, and above all, the need to showcase the products of our country. We were looking for a space with attention to detail, that reflected who we are, and that invited people to share and spend time in good company, but above all, to enjoy good food, which is such a characteristic part of our land and culture.
What made you say “we have to open this place”?
Nuria: I had been developing this idea in my head for some time, as I have always been linked to entrepreneurship and gastronomy throughout my professional career, and making it a reality was both a dream and a necessity.
Lucía: When we met, besides having an incredible friendship connection, we both felt that we wanted to create something together from scratch. When Nuria shared her idea with me, I didn’t hesitate for a moment to dive in. Within a few months, we found the perfect name, built a brand that reflected 100% what we wanted to convey, and got to work to make Apetito a reality before the summer of 2025.

The idea is to make the sandwich an experience, not just a lunch… what’s the key?
The key, and we can say we have achieved it, was to place this entire concept in a unique, meticulously designed, cosy, and distinctive space that invites people to stay. We wanted to “romanticise” the idea of eating a sandwich and turn it into a true ritual.
Which part of the space design was the most fun or unexpected to create?
The whole space has been a big process that we thoroughly enjoyed, seeing it gradually take shape. The counter was something we particularly loved because it would be the heart of Apetito, and when it was finished, the space completely transformed. Lighting was also super important, and we were lucky to have The Masie involved in this process.

Which sandwich best represents each of your personalities?
We are quite similar. We are two days apart, and our personalities are very aligned, which made us connect from day one. Without a doubt, we are our Rústico: a sandwich with a lot of personality, a fresh and different touch, always a yes at any time.

Good lighting, comfort, and practicality, but with an unexpected touch that you will remember forever when thinking about that place.
